Corn Bread
~ James Dunn

Heat oven to 400F
Get a 7" iron skillet and place in oven

Ingredients:

  • 1 - 1/2 cups of corn meal
  • 1/2 cup flour
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 level teaspoons of baking power
  • 1 egg
  • 1 - 1/4 cup of milk
  • 4 tablespoons of vegetable oil

combine and mix all ingredients well

  • add water or additional milk until mixture is smooth & can be poured
    • like you would for making a pancake
    • if top of baked corn bread is cracked, reduce the oven temperature 25F
  • let mixture stand for 5 minutes while oven is heating up
  • remove skillet from oven and apply cooking spray
  • pour in corn meal mixture place in oven on center rack until top is golden brown
    • about 30 minutes
    • I personally like a light brown color better, crust is softer

Troubleshooting:

  • If top and bottom of cornbread are brown but center is uncooked
    • reduce oven temperature 25F degrees and extend cooking time
  • If top is brown, but bottom is not, yet center is cooked
    • move to lower baking rack
  • If bottom is brown, but top is not, yet center is cooked
    • move to higher baking rack

Variations:

  • use less oil to make a harder corn bread
  • rub butter on browned corn bread top to help keep soft
  • use buttermilk instead of milk
  • add a small amount of canned corn kernels to mixture before baking
  • dice some jalapeno peppers into the mixture before baking
  • store corn bread in a plastic bag to help keep it soft
  • warm corn bread in a plastic bag in a microwave to soften bread
  • pour milk over crumbled day-old cornbread as a cereal
  • Pam B suggests: use Vanilla Soy Milk instead of milk for a yummy treat

Cornmeal Pancakes

Cornmeal pancakes have a more rich flavor than regular flour pancakes.

  • Use the same mixture created above
  • Prepare a flat skillet coated with oil
  • Heat skillet on low to medium heat until a drop of water sizzles
  • Pour the cornmeal mix to make the size of pancake you like
  • Watch the edges for browning and then flip
    • Too high a heat and the top will still be runny when you need to flip


Conversions

1 Tablespoon of Oil = 12.6 grams = 0.444 ounces

1 teaspoon of Baking Powder = 3.0 grams = 0.106 ounces
